Allergy-free Cinnamon Pretzels

I've seen a lot of delicious looking cinnamon pretzel recipes around blog land and I had to try them out. I wanted to make something that we could eat as a family including my son, who has allergies.

So using this recipe and Glutino Pretzel sticks I quickly made up a batch. It's a very easy recipe.

The kids loved them and gobbled them right up. I will definitely be making this again!

Allergy Friendly Kids Meal

Dinner:
Slightly crunched Fritos
Taco meat mixed with black beans and corn
Chopped romaine lettuce

I love this meal because it is super easy to fix and the whole family loves it. This works perfect for my son just the way it's pictured above. I like to add a drizzle of Ranch dressing on mine.

Wheat-free Dairy-free Egg-free Kids Meal

Lunch:
Popcorn Indiana Cinnamon Sugar Kettlecorn
Orange slices
Spinach
Canned tuna fish
Raisins
Gluten-free, Dairy-free, Egg-free chocolate cookie
Almond milk (not pictured)

It's been about five years since we found out that my oldest had food allergies. I've noticed that over the years it has gotten a lot easier to find foods that work for him. Hey, even Walmart has a gluten-free section. I'm really happy to see that this type of food is widely available now.

Wheat-Free Dairy-free Kids Meal

When I first found out about my son's food allergies/sensitivities (you can read the whole story here) I felt hopeless.  I really didn't know what to feed him.  Everything that we ate as a family had either wheat, dairy or eggs.

I felt lost.

But, I decided to dive right in to see what kind of foods were out there for people like my son.  I realized over time that finding foods that my child could eat and like was possible.  It wasn't easy at first, but over the years I've started to figure it out.

For Lunch:
Sliced chicken breast
Potato chips
Apple slices
Glutino Pretzel Sticks
Sliced green bell peppers
Newmans-O's Wheat-free, Dairy-free cookie
A glass of calcium fortified orange juice

A Personal Story and New Feature!

My oldest, who is now six, was diagnosed with asthma when he was just six-months-old.  I was devastated and I just couldn't hold back my tears as I sat in the doctor's office.  I suffered from terrible asthma as a child and I didn't want him to have to go through what I went through.

Six months later after that sad day in the doctor's office, my oldest had a life threatening asthma attack and was hosptialized for three days.  It was the worst three days of my life.  Now, it's just a big blur.  Soon after we found out through various tests that he had allergies and food sensitivities to dairy, wheat, eggs, soy and some nuts (including walnuts, peanuts, and hazlenuts)

My husband and I were stunned with the news.  What were we going to feed this kid??  He was already underweight and I felt so helpless.  Well, the search began.

As I look back to that day I remember how scared I was and how clueless I was about food and the variety of wheat-free, dairy-free food out there on the market.  Over the past six years I've learned a lot.  I've learned what foods work for my son and what foods don't.  What foods he'll actually eat and foods that he won't.

I'm so excited to start a new feature on my blog, meal ideas for the child who has food allergies.  Starting this Tuesday I thought that I would post a meal a week.   These are real meals that my son eats and loves!

I'm definitely not an expert or a professional nutritionist.  I'm just a Mom and these are just ideas.  I really hope that some of these ideas can help others who may be searching for ways to feed their own child.
